Fettuccine Bolognese

First of all I need to say how lovely the ASK Italian cook book is! The recipes are mouthwatering as are the photographs and it’s a real joy to sit and look through it. You may remember I’ve been working with ASK Italian over the last few weeks on their campaign to #respectthepasta. My first challenge was to enjoy a family meal at our local ASK Italian, and the second challenge was to cook the perfect pasta at home. The latest challenge was to try and recreate a dish from the ASK menu in my own kitchen. I was sent a pack of ASK Italian fettuccine and chose to make the fettuccine Bolognese recipe.

I have to admit that I made this in two stages so I’m lacking photographs for this challenge. On Saturday I made the Bolognese sauce and left it in the fridge over night. We were busy all day Sunday so it was lovely to return home, cook the pasta and heat the sauce, my favourite kind of easy meal!

The Bolognese sauce was easy to make, just 20 minutes to prepare and then it cooked gently for an hour and a half. It included lots of yummy ingredients:

4 tablespoons olive oil
1 large onion
450 lean minced beef
4 garlic cloves
100ml red wine
150ml beef stock
400g tin chopped tomatoes
500g tomato passata
5 basil leaves, 2 tablespoons finely chopped parsley, 1 teaspoon dried oregano
2 tablespoons Worcestershire sauce
juice of half a lemon
salt and pepper

On Sunday we ate our lovely fettuccine Bolognese. I heated the Bolognese sauce and cooked the fettuccine which is a ribbon pasta and great for holding the Bolognese sauce. I used the tips I learned the other weeks for cooking the perfect pasta at home, then stirred the pasta and the Bolognese sauce together before serving. We enjoyed it with garlic bread and a large glass of red wine and it was delicious and full of flavour. I never buy fettucine but we all loved it so I will definitely be looking out for it again.

    We are all big lovers of pasta but have never tried fettuccine. We will definitely try it now, your dish looks scrumptious.

    This sounds really delicious. I also love the idea of cooking a meal ahead so that it’s ready for you after a day out. So handy.

    We are vegetarian but could definitely make this using quorn mince. I love how big and thick the fettuccine is – yummy!
