Sparkly Christmas biscuits

Our biscuit barrel was sadly empty so I knew it was time to fill it up. I chose one of Tate & Lyle Sugar’s gorgeous Christmas recipes and made the biscuits last night.

Much as my children love helping sometimes it’s really nice to concentrate and enjoy doing something on my own. I followed the recipe for the sparkly Christmas biscuits, mainly as it used cinnamon and ginger, which I just love. I adapted the recipe slightly as I forgot to buy an orange 🙂

The recipe made a lot of dough so I cut out star shapes as the recipe suggested as well as some snowmen and Christmas tree shapes. I baked them then left them to cool overnight.

Today we finished them off. The recipe suggests decorating them with white icing and sprinkles but my children love icing so I let them loose with some ready made icing pens. They did a great job and ate as many as they decorated.

The biscuits I made with my stand up cookie cutter set didn’t work so well. The biscuits filled out when baking so didn’t fit in the little biscuit stand. I tried filing the stand but they were so small they just kept breaking so I gave up. Regardless, the recipe is a good one so the biscuits are yummy.

We’ve already sampled a fair few but they should last at least until the weekend!
