Gingerbread pancake recipe

Mmmm, gingerbread pancakes! I’ve been meaning to try these for a while but have been waiting to find a jar of molasses so I could make them the American way. I finally tracked down a jar in my local independent health food shop.

Gingerbread pancake recipe

The ingredients are simple:

  • 12oz plain flour
  • 1 tsp baking powder
  • 1/2 tsp dried ginger
  • 1 tsp ground cinnamon
  • 1 egg
  • 1/2 vanilla extract
  • pinch of salt
  • 60ml molasses
  • 375ml water

Whisk the dry ingredients together. In a separate bowl beat the egg with the vanilla and molasses and add the water. Combine the contents of the two bowls.

Heat a saucepan and some oil. Add a generous dollop of mixture and cook until the edges begin to dry. Flip the pancake and cook the other side.

Hhmm, they turned out quite thick so needed longer cooking time than normal pancakes. After seeing the raw mixture which didn’t look too good they actually tasted yummy. However as they were so thick they were also quite filling – so two was more than enough!

I enjoyed my pancakes with traditional lemon and sugar whilst my other half enjoyed his with maple syrup. Yep, he has a serious sweet tooth.

Recommended if you fancy trying something a bit different!
